Storico (Historic) Is a cooked ham made "as it once was", with raw material rigorously selected from Italian - bred pig. The production process is highly artisanal: the thighs are carefully boned by hand to maintain the anatomical shape, subsequently sewn and tied by hand, then put in linen sheets for slow steaming.
In 1956, Ferrarini was established in Emilia-Romagna, Italy, and it was here that prosciutto was first produced without the use of polyphosphate additives. More than 3,000 acres of farmland spread across Emilia-Romagna make up Ferrarini today. They produce a variety of well-known Italian staples using their own original recipes and regional ingredients because they are committed to maintaining simple and genuine Italian traditions.
