Mortadella Classica, a Slow Food Presidium, is certainly one of the most representative products of the Bonfatti Company. In defense of its historicity, only Italian meat is used for production, with no added GMOs. Bonfatti mortadella is characterized by a soft pinkish color and a delicate aroma.
Only the noble cuts of shoulder and cheek are used to produce the sausage, the curing is composed in the traditional way (salt, garlic, mace, pepper, coriander, cardamom, cloves and nutmeg), and the product is stuffed into a natural bladder. In keeping with tradition, it is cooked in brick stoves.
