Aglianico del Vulture

Aglianico del Vulture

By Master Chef Gianluca Deiana Abis

1. History

Aglianico del Vulture DOC is one of southern Italy’s most prestigious red wines, hailing from the volcanic slopes of Monte Vulture in the Basilicata region. The Aglianico grape, which has ancient origins possibly linked to Greek colonists, thrives in the unique terroir of this area. Volcanic soils, high elevations, and a Mediterranean climate provide the perfect conditions for crafting a wine of extraordinary depth, structure, and aging potential. Known as the “Barolo of the South,” Aglianico del Vulture gained DOC status in 1971 and later saw its top examples elevated to DOCG status with the introduction of Aglianico del Vulture Superiore. With flavors of dark cherry, blackberries, tobacco, and spices, complemented by firm tannins and bright acidity, this wine has become a benchmark for Italy’s southern reds.

2. Pairing

Aglianico del Vulture’s robust tannins, fresh acidity, and complex flavor profile make it an ideal match for rich, flavorful dishes.

  • Braised Lamb Shanks: The wine’s dark fruit and herbal notes enhance the savory, tender flavors of slow-cooked lamb.

  • Wild Boar Stew: Its earthy undertones and spicy character complement the gamey richness of wild boar dishes.

  • Pasta with Ragù Napoletano: Aglianico’s structure and depth stand up to the bold, tomato-based sauce and slow-cooked meats in this traditional southern Italian ragù.

  • Aged Pecorino or Caciocavallo Podolico: The wine’s firm tannins and ripe fruit balance the salty, nutty intensity of these aged cheeses.

  • Mushroom and Truffle Risotto: Its earthy flavors and bright acidity highlight the rich, umami character of mushrooms and truffles.

3. The Top Wineries

  • Elena Fucci: Known for producing the iconic Titolo, a single-vineyard Aglianico del Vulture that showcases exceptional elegance and depth.

  • Cantine del Notaio: A producer that blends tradition and innovation, creating complex, age-worthy Aglianico wines from prime volcanic vineyards.

  • Paternoster: A historic winery recognized for crafting Aglianico del Vulture that balances power and finesse, offering some of the region’s most respected expressions.

4. The Notes of Master Chef Gianluca Deiana Abis

Aglianico del Vulture is a wine that consistently inspires me. Its bold structure, vibrant acidity, and layered complexity make it one of southern Italy’s true gems. I love how it pairs so effortlessly with rich, hearty dishes, allowing the wine’s volcanic roots to shine through in every sip. For me, Aglianico del Vulture is a reminder that some of Italy’s most remarkable wines come from its most rugged, dramatic landscapes. It’s a wine of patience and reward—one that reflects the resilience of its terroir and the dedication of the winemakers who bring it to life.
