The origins of Anatra all'Arancia can be traced back to French cuisine, where the combination of duck and orange (known as Canard aux Oranges) was popularized. However, the dish quickly found its way into Italian kitchens, especially in regions like Tuscany, where game and poultry are often paired with fruit sauces to add complexity and brightness. Over time, the dish became a staple of Italian festive and holiday meals, offering a luxurious yet simple flavor profile. Today, it remains a beloved classic, frequently served at family gatherings and special occasions.


Anatra all'Arancia Recipe

Ingredients

  • 1 whole duck (about 2 kg / 4.4 lbs), cleaned and patted dry

  • 2 tablespoons extra virgin olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, smashed

  • 1 carrot, peeled and finely chopped

  • 1 stalk celery, finely chopped

  • 1/2 cup dry white wine

  • 2 cups fresh orange juice (about 3–4 oranges)

  • Zest of 1 orange

  • 1 tablespoon honey

  • 2 tablespoons white wine vinegar

  • 2 tablespoons butter

  • Salt and freshly ground black pepper, to taste

  • Orange segments (for garnish)

  • Fresh parsley, chopped (for garnish)


Instructions

Step 1: Prepare the Duck

  1. Preheat your oven to 180°C (350°F).

  2. Season the duck inside and out with salt and freshly ground black pepper.

  3. In a large ovenproof skillet or roasting pan, heat the olive oil over medium-high heat.

  4. Brown the duck on all sides, turning it carefully to get an even golden-brown color, about 10–12 minutes. Once browned, remove the duck from the pan and set it aside.

Step 2: Sauté the Aromatics

  1. In the same skillet, add the chopped onion, garlic, carrot, and celery. Sauté for 5 minutes, until the vegetables soften and become aromatic.

  2. Pour in the white wine, scraping the bottom of the pan to release any caramelized bits. Let it simmer for 2 minutes to allow the wine to reduce slightly.

Step 3: Roast the Duck

  1. Place the duck back in the skillet or roasting pan with the sautéed vegetables.

  2. Transfer the pan to the oven and roast for 40–50 minutes, turning the duck halfway through cooking. The duck should be golden and cooked through. Baste the duck with the pan juices every 15 minutes to keep it moist.

Step 4: Prepare the Orange Sauce

  1. While the duck is roasting, prepare the orange sauce. In a small saucepan, combine the orange juice, orange zest, honey, and white wine vinegar. Bring to a simmer and let it reduce by half, about 10–12 minutes.

  2. Once reduced, remove the sauce from the heat and whisk in the butter to give it a rich, velvety texture. Season with salt and pepper to taste.

Step 5: Serve the Duck

  1. When the duck is finished roasting, remove it from the oven and let it rest for 10 minutes before carving.

  2. Carve the duck into portions and arrange on a serving platter.

  3. Spoon the orange sauce over the duck and garnish with orange segments and freshly chopped parsley.

To intensify the flavor of the orange sauce, you can add a splash of Grand Marnier or Cointreau while the sauce is simmering. This will introduce a slight citrus liqueur note that complements the sweetness of the oranges and the richness of the duck.
