Calamari Ripieni is a classic Italian dish that highlights the culinary artistry of stuffing tender squid with a flavorful filling. Originating from coastal regions, this dish is beloved for its versatility and ability to showcase the freshest seafood. History of Calamari Ripieni

Stuffing squid has been a tradition in Italy for centuries, especially in regions like Sicily, Campania, and Liguria. The dish was born from the desire to create a satisfying meal using humble, readily available ingredients. Fishermen often stuffed squid with breadcrumbs, herbs, and leftover ingredients to make a hearty and flavorful dish. Over time, regional variations emerged, featuring different fillings like ricotta, seafood, or sausage. Today, Calamari Ripieni remains a symbol of Italian coastal cuisine, combining simplicity with bold flavors.


Calamari Ripieni Recipe

Ingredients

For the Stuffed Calamari:

  • 8 medium-sized calamari (squid), cleaned, with tentacles reserved

  • 100 g (3.5 oz) breadcrumbs

  • 50 g (1.75 oz) Pecorino Romano, grated

  • 2 garlic cloves, minced

  • 2 tbsp fresh parsley, finely chopped

  • 1 large egg, beaten

  • 50 g (1.75 oz) cooked shrimp or crab meat, chopped (optional)

  • 2 tbsp olive oil

  • Salt and pepper, to taste

For the Sauce:

  • 400 g (14 oz) canned peeled tomatoes, crushed

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • 50 ml (1/4 cup) dry white wine

  • Salt, pepper, and chili flakes (optional), to taste

  • Fresh basil leaves, for garnish


Instructions

Step 1: Prepare the Squid

  1. Clean the calamari by removing the innards and rinsing under cold water. Reserve the tentacles and chop them finely for the stuffing.

  2. Pat the calamari tubes dry with paper towels and set them aside.

Step 2: Make the Filling

  1. In a bowl, combine breadcrumbs, Pecorino Romano, minced garlic, parsley, chopped tentacles, and shrimp or crab meat (if using).

  2. Stir in the beaten egg and olive oil. Mix until the filling holds together but is not too wet. Season with salt and pepper to taste.

Step 3: Stuff the Calamari

  1. Using a small spoon, gently fill each calamari tube with the stuffing, leaving a little space at the top to prevent bursting during cooking.

  2. Close the opening with a toothpick to secure the filling.

Step 4: Prepare the Sauce

  1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until soft and fragrant.

  2. Deglaze the pan with white wine and let it reduce slightly.

  3. Stir in the crushed tomatoes and season with salt, pepper, and chili flakes (if using). Simmer for 10 minutes.

Step 5: Cook the Calamari

  1. Place the stuffed calamari in the skillet with the sauce. Cover and cook over low heat for 15–20 minutes, turning occasionally to ensure even cooking.

  2. Remove the toothpicks before serving.

Step 6: Serve

  1. Arrange the calamari on a platter, spooning the sauce over the top.

  2. Garnish with fresh basil leaves and serve hot, accompanied by crusty bread or a side of sautéed greens.

For an added layer of flavor, lightly sear the stuffed calamari in olive oil before simmering them in the sauce. This creates a caramelized exterior that enhances the dish's taste and texture.
