Chef Gianluca Deiana Abis: Banana Bread

Ingredients:

4 bananas

3 1/2 cups of All purpose flour

200 g of butter

1/2 cup of Sugar

2 large eggs

1/2 tsp Cinnamon powder

1/2 cup of Walnuts, chopped

1/2 tbsp of Baking powder

1/2 tsp of Baking Soda

lemon juice qb

pinch of salt


Preparation:

To prepare the banana bread, start by peeling the bananas and cutting them into slices. Drizzle them with lemon juice to prevent blackening. Mash them with a fork and set aside. In another bowl add soft butter (cut into small pieces) and sugar. Cream the butter and sugar until the mixture is light and fluffy with electric whisk. Add eggs, possibly one at a time. Add a pinch of salt, then add the banana puree. Mix it well and continue combining the sieved flour with baking soda and baking powder. Season with cinnamon, add walnuts and mix again.

Pour the dough into the 22.5x8.5 cm plumcake mold and level it. Bake in a preheated oven at 180° for about 60 minutes. Try the toothpick at the end of cooking, then take out your banana bread and let it cool before turning it out. Enjoy the banana bread!

Chef tips:

You can flavor banana bread with vanilla instead of cinnamon, add chocolate chips or almonds!
