Ingredients:
500 g of Mascarpone 500 ml of fresh liquid cream 150 g of sugar 4 sheets of jelly For the strawberry sauce: 200 g of strawberries 100 g of sugar half a lemon For the caramel: 400 g sugar 200 ml water 1 vanilla bean
Preparation:
Before starting to prepare the recipe, it is important to adopt a little trick to get the best result: be sure to take Mascarpone out of the fridge about 30 minutes before preparation. To prepare the panna cotta, start by soaking the gelatine in cold water. In a saucepan, pour the fresh cream and Mascarpone, add the sugar and mix well. Turn on the heat over medium heat and bring everything to a boil while continuing to stir. After the start of the boil, cook for 3 minutes continuing to stir, turn off the heat and let it cool for a few minutes. Put the mixture in the mixer and add the well-squeezed gelatine and mix well. At this point, take any shaped mold, lay it on a plate and pour the mixture inside. In this way the compound will adhere well to all the walls of the mold. Let it rest for at least 15 minutes and when it has cooled put your panna cotta in the refrigerator for at least 5 hours. Or you can use dessert cup instead of mold, and don’t bother to put upside down after chilled. After the rest time, turn the mold upside down on the plate and gently extract your panna cotta. To decorate the panna cotta, proceed to prepare the strawberry sauce and caramel. Cut the strawberries into small pieces and blend them together with the sugar and the juice of half a lemon. Transfer the mixture to a saucepan and cook for 15 minutes. The sauce will have to thicken. Let the sauce cool while you prepare the caramel: pour the granulated sugar into a saucepan with a thick bottom and put it on the fire over a law heat. In another saucepan, boil some water with the vanilla. When the sugar has dissolved and turned into brown color, remove the vanilla bean from the water. Pour the boiling water into the sugar and stir quickly. Remove from the heat and continue stirring for a few minutes. You can decorate your panna cotta one with the strawberry sauce and the other with the caramel.

Panna cotta is a spoon dessert very well known and appreciated all over the world for its simplicity of preparation and delicate flavor. Very simple and tasty recipe, it is much loved by children for its consistency similar to a pudding, but also because accompanied by chocolate, caramel, fresh fruit or other, it gives them an always different and delicious dessert. You can use any other type of shape molding; maybe on holidays you can use the ones by presenting a Santa Claus or a bunny, or, depending on the season, sea creatures or a snowman.
