Cirò Rosso
Cirò Rosso
By Master Chef Gianluca Deiana Abis
1. HistoryCirò Rosso is Calabria’s most renowned red wine, deeply rooted in the region’s ancient winemaking traditions. It is primarily made from Gaglioppo, a grape believed to have been brought to the region by Greek settlers over 2,500 years ago. The wine takes its name from the small coastal town of Cirò, where vineyards stretch along the Ionian Sea. For centuries, Cirò Rosso has been celebrated as a bold, sun-kissed wine that captures the rugged beauty of Calabria. The region’s warm Mediterranean climate, combined with well-draining clay and sandy soils, contributes to the wine’s distinctive character—robust yet balanced, with flavors of ripe red berries, spices, and a hint of dried herbs.
2. PairingCirò Rosso’s ripe fruit, firm tannins, and earthy nuances make it an excellent match for Calabria’s rich and spicy cuisine.
Nduja and Calabrian Salumi: The wine’s bright acidity and bold flavors cut through the rich, spicy heat of these traditional cured meats.
Eggplant Parmesan: Cirò’s red berry and herbal notes complement the roasted eggplant, tangy tomato sauce, and melted cheese.
Grilled Sausages and Peppers: The wine’s robust structure pairs perfectly with the charred, savory flavors of sausages and the sweet smokiness of grilled peppers.
Braised Lamb Shanks with Rosemary: The earthy and herbal undertones of Cirò enhance the dish’s aromatic herbs and tender, slow-cooked lamb.
Aged Pecorino Crotonese: This regional cheese’s salty, nutty profile harmonizes with Cirò’s ripe fruit and spicy finish.
