History of Cozze alla Marinara
The tradition of cooking mussels in a marinara-style sauce has its roots in the coastal regions of southern Italy, particularly in Naples and the Amalfi Coast. The word "marinara" translates to "sailor-style" in Italian, and it’s thought that this dish was popularized by fishermen who would cook mussels with simple, fresh ingredients like tomatoes, garlic, and olive oil after returning from a day at sea. Over time, this dish became a beloved staple of Italian seafood cuisine, enjoyed by locals and visitors alike.

Ingredients
1 kg (2.2 lbs) fresh mussels, scrubbed and debearded
3 tbsp extra virgin olive oil
3 garlic cloves, thinly sliced
1 small onion, finely chopped
400 g (14 oz) canned tomatoes, crushed
1/2 cup dry white wine
1 tsp dried oregano
Fresh parsley, chopped (for garnish)
Salt and freshly ground black pepper, to taste
1 fresh chili pepper (optional), finely chopped
Crusty bread, for serving
Instructions
Step 1: Prepare the Mussels
Rinse the mussels under cold water, scrubbing the shells with a brush and removing any beards. Discard any mussels that are open and do not close when tapped.
Set the mussels aside to drain.
Step 2: Sauté Aromatics
Heat the olive oil in a large, deep pan or skillet over medium heat.
Add the garlic and onion, sautéing for 3–4 minutes until softened and fragrant, but not browned.
If using, add the fresh chili pepper at this point for a subtle heat.
Step 3: Add Tomatoes and Wine
Stir in the crushed tomatoes and dried oregano, cooking for another 5 minutes, allowing the sauce to thicken slightly.
Pour in the white wine, stir well, and let it cook for 2–3 minutes until the alcohol evaporates.
Step 4: Cook the Mussels
Add the mussels to the pan and cover with a lid. Let them cook for 5–7 minutes, shaking the pan occasionally to help them open.
Once the mussels have opened, remove from the heat. Discard any mussels that remain closed.
Step 5: Garnish and Serve
Season with salt and pepper to taste.
Transfer the mussels to serving bowls, spooning the sauce over them.
Garnish with freshly chopped parsley.
Step 6: ServeServe the Cozze alla Marinara with warm, crusty bread to soak up the flavorful sauce.
Chef’s Tip by Gianluca Deiana Abis
For a deeper flavor, you can add a few anchovies to the pan when sautéing the garlic and onion. The anchovies will melt into the sauce, adding a rich umami flavor that enhances the overall taste of the dish.
