History
Fagottini, meaning "small bundles" in Italian, are a traditional appetizer or snack that combines savory fillings with light, flaky pastry. This particular version is often seen in various regions of Italy, typically made with prosciutto and cheese, then baked or fried to crispy perfection. It’s a popular choice for casual meals, picnics, or gatherings.
Ingredients
1 sheet of puff pastry (store-bought or homemade)
100g Prosciutto di Parma (or any high-quality Italian ham)
100g Mozzarella or Fior di Latte cheese, cut into small cubes
50g Parmigiano Reggiano (grated)
1 egg (for egg wash)
Freshly ground black pepper (to taste)
Olive oil (for drizzling)
Fresh rosemary (optional, for garnish)
Instructions
Prepare the Filling:
Cut the prosciutto into small pieces or strips.
Cube the mozzarella (or Fior di Latte) and mix it with the grated Parmigiano Reggiano. Add a pinch of freshly ground black pepper to taste.
Prepare the Pastry:
Roll out the sheet of puff pastry on a floured surface.
Cut the pastry into small squares (about 4x4 inches).
Assemble the Fagottini:
Place a small spoonful of the ham and cheese mixture in the center of each pastry square.
Fold the corners of the pastry toward the center, creating a small parcel (like a bundle). Pinch the edges to seal.
Egg Wash:
Beat the egg in a small bowl and brush it over the tops of the fagottini to give them a golden color when baked.
Bake:
Preheat the oven to 180°C (350°F).
Place the fagottini on a baking sheet lined with parchment paper and drizzle lightly with olive oil.
Bake for about 20-25 minutes, or until golden and crispy.
Serve:
Once baked, remove from the oven and let them cool for a few minutes.
Garnish with a sprig of fresh rosemary for a fragrant touch.
Wine Pairing
Pair these savory fagottini with an Italian white wine such as a Gavi di Gavi or Vermentino. The fresh acidity of these wines will complement the richness of the ham and cheese filling, balancing out the flavors perfectly.

If you want to elevate the flavor of these fagottini, consider adding a few drops of balsamic vinegar inside the parcel before sealing it. This will bring a delightful sweet-tangy contrast to the rich and savory filling.
