Frittata di Zucchine

History

The frittata is a classic Italian dish that can be made with almost any combination of vegetables, meats, or cheeses. A popular dish in many Italian regions, the frittata di zucchine is a perfect spring or summer meal, celebrating fresh, seasonal zucchini. It’s a versatile and easy-to-make dish, enjoyed either warm or at room temperature, often served as a light lunch or appetizer.


Ingredients

  • 4 medium zucchini, thinly sliced

  • 6 large eggs

  • 2 tbsp extra virgin olive oil

  • 1 small onion, finely chopped

  • 2 tbsp Parmesan Reggiano, grated (optional)

  • Salt & pepper to taste

  • Fresh basil or parsley, chopped (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the onion and sauté until softened, about 5 minutes.

  2. Add the zucchini slices to the pan and cook for about 7-10 minutes, until tender and slightly caramelized. Season with salt and pepper.

  3. In a bowl, whisk the eggs with a pinch of salt and pepper. If using, stir in the Parmesan Reggiano and fresh basil or parsley.

  4. Pour the beaten eggs over the cooked zucchini in the skillet. Reduce the heat to low and cook gently until the eggs are set around the edges but still a little soft in the center, about 5–7 minutes.

  5. If needed, finish cooking the frittata by briefly placing the skillet under a broiler to firm up the top (about 2-3 minutes). Be careful not to burn the top.

  6. Let the frittata cool for a few minutes before slicing and serving.


Wine Pairing 🍷

A Verdicchio or Pinot Grigio will complement the delicate flavor of the zucchini and the light texture of the frittata. For a more herbaceous pairing, a Frascati works wonderfully.


Chef Tip

To ensure a smooth texture, make sure not to overcook the eggs. The frittata should be tender and slightly creamy in the center. Let it rest before slicing, as it helps to set the texture.
