Ornellaia

By Master Chef Gianluca Deiana Abis

1. History

Ornellaia is one of Tuscany’s most iconic wines, produced on the estate of Tenuta dell’Ornellaia, near the coastal town of Bolgheri. Created in 1981 by Marchese Lodovico Antinori, this Super Tuscan was conceived as a Bordeaux-style blend using Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot—grapes not traditionally associated with Tuscan winemaking at the time. The unique maritime climate, combined with the area’s gravelly soils, proved ideal for these varieties, allowing them to develop remarkable complexity and elegance. Over the decades, Ornellaia has achieved legendary status, consistently receiving critical acclaim and establishing itself as one of the world’s most sought-after fine wines. It represents not only the innovation of Bolgheri’s Super Tuscan movement, but also the heights that Italian winemaking can achieve.

2. Pairing

Ornellaia’s full body, complex layers, and silky tannins make it a luxurious companion to refined, flavorful dishes.

  • Braised Veal Shank (Osso Buco): The wine’s dark fruit, floral notes, and savory spice enhance the tender, slow-cooked veal and its aromatic sauce.

  • Prime Rib Roast with Rosemary and Garlic: Ornellaia’s structure and rich flavor profile stand up to the juicy, herb-crusted roast beef.

  • Wild Mushroom Risotto with Truffles: The wine’s earthy undertones and elegant acidity elevate the umami of mushrooms and the luxurious aroma of truffles.

  • Aged Parmigiano Reggiano or Pecorino Toscano: The nutty, salty complexity of these cheeses pairs perfectly with Ornellaia’s depth and long finish.

  • Duck Breast with Cherry Reduction: The wine’s velvety texture and ripe fruit complement the sweet-savory glaze and richness of duck.

3. The Top Wineries

  • Tenuta dell’Ornellaia: As the producer of Ornellaia, this estate is the definitive source. Its meticulous viticulture and precise winemaking have made it a benchmark for the Bolgheri region.

  • Masseto (a single vineyard owned by Ornellaia): While Masseto is a Merlot-based wine and a separate label, it shares the same commitment to excellence as Ornellaia and is often associated with the estate’s legendary status.

  • Le Macchiole: While not producing Ornellaia itself, Le Macchiole is another highly regarded estate in Bolgheri, reflecting the region’s exceptional terroir and its ability to produce world-class wines.

4. The Notes of Master Chef Gianluca Deiana Abis

Ornellaia is a wine that embodies sophistication and precision. For me, it’s more than a wine—it’s an experience. I love how it reflects the unique terroir of Bolgheri, combining the power and depth of a Bordeaux blend with the elegance and balance that only Tuscany can offer. Ornellaia is a wine to savor slowly, to enjoy with thoughtful, flavorful dishes, and to share on special occasions. It’s a true masterpiece that highlights the innovation and artistry of Italian winemaking at its finest.
