History

This dish is inspired by Italy’s love for fresh, high-quality ingredients that require minimal cooking to shine. The combination of smoked or fresh raw salmon with creamy goat cheese is a modern twist on traditional Italian antipasti. The goat cheese adds a tangy depth that complements the buttery texture of salmon, creating a refined yet simple dish perfect as an appetizer or light meal.


Ingredients

  • 400g fresh salmon fillet (skinless, boneless) or high-quality smoked salmon

  • 200g fresh goat cheese (caprino fresco)

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon lemon zest

  • 1 tablespoon fresh chives, finely chopped

  • 1 tablespoon fresh dill, chopped

  • Salt and freshly ground black pepper to taste

  • 1 tablespoon honey (optional, for a touch of sweetness)

  • 1 handful of arugula (optional, for serving)

  • Lemon wedges, for garnish


Instructions

  1. Prepare the Salmon:

    • If using fresh raw salmon, slice it into thin, wide strips (about 1–1.5 cm thick) suitable for rolling.

    • If using smoked salmon, ensure the slices are large enough to hold the filling.

  2. Prepare the Filling:

    • In a small bowl, mix the fresh goat cheese with lemon zest, chopped chives, and dill.

    • Season with a pinch of salt and pepper. If you like a slightly sweet contrast, add a drizzle of honey and mix well.

  3. Assemble the Rolls:

    • Place a small spoonful of the goat cheese mixture at one end of each salmon strip.

    • Gently roll the salmon around the filling, forming a tight roll.

    • Repeat until all salmon strips are used.

  4. Serve:

    • Arrange the rollini on a serving plate. Drizzle with extra virgin olive oil and garnish with fresh dill.

    • Serve on a bed of arugula for a peppery contrast.

    • Add a few lemon wedges on the side for a final citrus touch.


Wine Pairing:

Pair this dish with a Greco di Tufo, a crisp white wine from Campania with citrus and mineral notes that enhance the creaminess of the goat cheese and the delicate taste of the salmon. Alternatively, a Gavi di Gavi from Piedmont would be an excellent choice, providing a refreshing balance to the dish.


Chef Tip:These Rollini di Salmone e Caprino Fresco can be enjoyed raw or lightly seared for a different texture. If serving raw, ensure you use the freshest salmon available. For an extra touch of elegance, add a few toasted pine nuts or crushed pistachios for a slight crunch.
