1. History

Salice Salentino DOC hails from the southern Italian region of Puglia, specifically from the Salento peninsula, often referred to as the “heel” of Italy’s boot. Established in 1976, the appellation primarily showcases Negroamaro, a grape that has been cultivated in this area for centuries. The warm, sun-drenched climate and clay-rich soils create ideal conditions for producing robust, richly flavored wines. While Negroamaro dominates, some Salice Salentino wines may also include small amounts of Malvasia Nera, which adds softness and complexity. Known for its deep color, full body, and notes of dark fruit, earth, and spice, Salice Salentino represents the rich agricultural and winemaking traditions of Puglia.


2. Pairing

Salice Salentino’s bold structure, smooth tannins, and ripe fruit make it an excellent companion for a range of hearty southern Italian dishes.

  • Orecchiette with Sausage and Broccoli Rabe: The wine’s dark fruit and earthy notes complement the savory sausage and slightly bitter greens.

  • Roasted Lamb or Goat: Its robust body and spice pair beautifully with the rich, tender flavors of slow-roasted meats.

  • Eggplant Parmigiana: The wine’s acidity and dark cherry flavors balance the layers of rich eggplant, tomato sauce, and melted cheese.

  • Aged Pecorino or Caciocavallo: The salty, nutty complexity of these cheeses matches the wine’s depth and ripe fruit character.

  • Spicy Soppressata or Capocollo: Salice Salentino’s smooth tannins and touch of spice complement the bold flavors of cured Puglian meats.
