Sardinian Fish Stew (Zuppa di Pesce alla Sarda)

Ingredients
1 kg mixed fresh fish (snapper, sea bass, or other firm white fish), cut into chunks
500g shellfish (mussels, clams, and squid), cleaned
2 garlic cloves, minced
4 ripe tomatoes, peeled and chopped
1 onion, finely chopped
1 glass white wine (Vermentino or another Sardinian white)
1 tsp saffron threads
2 tbsp extra virgin olive oil
1 litre fish stock (or water with fish bouillon cube)
1 small bunch fresh parsley, chopped
Salt and freshly ground black pepper, to taste
Toasted Sardinian bread (optional, for serving)
Instructions
Prepare the Saffron Infusion:
Begin by soaking the saffron threads in a small bowl with a few tablespoons of warm water. This will allow the saffron to release its vibrant color and aromatic oils, which will infuse the stew with its unique flavor.
Prepare the Base:
In a large pot, heat 2 tablespoons of extra virgin olive oil over medium heat.
Add the chopped onion and minced garlic and sauté until they become translucent, about 3-4 minutes. Be careful not to let them brown.
Add the chopped tomatoes and cook for another 5 minutes until they soften and begin to break down into a sauce. Season with a pinch of salt and pepper.
Deglaze the Pot:
Pour in the white wine and let it simmer for 2 minutes, allowing the alcohol to evaporate and the wine to mix with the base of the stew.
Add the Fish Stock and Saffron:
Add the fish stock to the pot, followed by the saffron infusion. Stir everything together and bring the broth to a simmer.
Let it cook for about 10 minutes to allow the flavors to meld and the broth to develop depth.
Add the Fish and Shellfish:
Add the firm fish chunks (snapper, sea bass, or others) to the pot and cook for 5-6 minutes.
Next, add the shellfish (mussels, clams, and squid) to the stew, making sure they’re well distributed. Cover the pot and let the seafood cook for about 5-7 more minutes, or until the shellfish have opened.
Final Seasoning:
Taste the stew and adjust the seasoning with salt and pepper as needed.
Just before serving, stir in the freshly chopped parsley to add freshness and color to the dish.
Serve:
Ladle the hot fish stew into bowls and serve with toasted Sardinian bread (optional) on the side to soak up the rich broth.
Garnish with extra parsley if desired.
