Sardinia Sebadas

Ingredients:

  • 250g semolina flour

  • 200g all-purpose flour

  • 1 egg

  • 50g butter (softened)

  • 100ml water

  • 1 pinch salt

  • 300g fresh pecorino sardo (grated)

  • 100g sugar

  • Zest of 1 lemon

  • Olive oil for frying

  • Honey for drizzling



Instructions:

  1. Prepare the dough:Mix semolina and all-purpose flour with a pinch of salt. Add the softened butter and egg, then slowly incorporate water until a dough forms. Knead until smooth and elastic. Let it rest for 30 minutes.

  2. Make the filling:In a bowl, mix grated pecorino sardo with sugar and lemon zest until well combined. This will form the cheese filling.

  3. Shape the Sebadas:Roll the dough into thin sheets. Place spoonfuls of the cheese mixture in the center of each circle, then fold the dough over to seal the edges, creating half-moon shapes.

  4. Fry the Sebadas:Heat olive oil in a pan and fry the Sebadas until golden brown and crispy on both sides. Drain excess oil on paper towels.

  5. Serve:Drizzle with honey while still hot and enjoy the perfect balance of crispy pastry and warm, cheesy filling.
