Teroldego Rotaliano

Teroldego Rotaliano

By Master Chef Gianluca Deiana Abis

1. HistoryTeroldego Rotaliano comes from the Trentino-Alto Adige region in northern Italy, where the Piana Rotaliana (Rotaliano Plain) provides an ideal setting for this indigenous grape. Teroldego is often called the “prince of Trentino” due to its long history in the region and its reputation as one of northern Italy’s most distinctive red wines. The fertile, well-drained soils and the area’s Alpine climate—characterized by warm days and cool nights—help the Teroldego grape develop a balance of intense fruit flavors, fresh acidity, and moderate tannins. Over time, Teroldego Rotaliano has earned a DOC designation, cementing its place as a hallmark of Trentino winemaking. Its signature profile of dark fruit, earthy undertones, and herbal nuances showcases the unique terroir of this Alpine valley.

2. PairingTeroldego Rotaliano’s vibrant acidity and bold fruit make it an ideal match for a variety of hearty and flavorful dishes.

  • Braised Beef or Pork: The wine’s dark cherry and blackberry notes complement the rich, slow-cooked flavors of braised meats.

  • Lamb Chops with Rosemary: The herbal undertones of Teroldego echo the fragrant rosemary, creating a seamless pairing.

  • Wild Mushroom Risotto: The wine’s earthy and slightly smoky character enhances the umami richness of mushroom-based dishes.

  • Hard Alpine Cheeses: Regional cheeses like Asiago Stravecchio or aged Montasio pair beautifully with Teroldego’s structured tannins and deep fruit flavors.

  • Rustic Sausages with Polenta: The wine’s acidity and fruit-forward nature balance the savory, spiced flavors of Italian sausages served over creamy polenta.

3. The Top Wineries

  • Foradori: One of the most renowned producers of Teroldego Rotaliano, Foradori is celebrated for its biodynamic approach and elegant, terroir-driven wines.

  • Cantina Rotaliana di Mezzolombardo: This cooperative winery has been a cornerstone of Teroldego production, offering classic expressions of the variety.

  • De Vescovi Ulzbach: A boutique winery focused on traditional methods, producing wines that highlight the complexity and ageability of Teroldego.

4. The Notes of Master Chef Gianluca Deiana AbisTeroldego Rotaliano is a wine that bridges the power of northern Italy’s mountains with the elegance of its winemaking traditions. For me, it’s a wine that offers something unique—a combination of fresh, vibrant fruit and deep, earthy complexity. Whether it’s paired with a hearty risotto, a robust meat dish, or a selection of aged cheeses, Teroldego brings a distinct Alpine character to the table. I appreciate its ability to balance intensity with finesse, making it a versatile yet unforgettable choice for those who love discovering the lesser-known treasures of Italian winemaking.
