Testaroli is an ancient Italian dish from the region of Liguria. It’s a unique pasta-like creation that’s made from a simple batter and cooked on a griddle. The result is a soft, slightly chewy texture that pairs perfectly with pesto or a tomato-based sauce.
Ingredients
For the batter:
300g all-purpose flour
200 ml water
1/2 teaspoon salt
2 tablespoons olive oil
For serving:
Pesto alla Genovese (traditional basil pesto) or Tomato Sauce
Grated Parmigiano Reggiano (optional, for garnish)
Instructions
Step 1: Prepare the Testaroli Batter
In a large mixing bowl, combine the flour and salt.
Gradually add the water while stirring constantly to avoid lumps. You want a smooth, thick batter.
Add the olive oil and continue mixing until the batter is smooth and has a slight consistency, similar to pancake batter.
Step 2: Cook the Testaroli
Heat a non-stick griddle or skillet over medium heat. Drizzle it lightly with olive oil.
Pour a small ladle of batter onto the griddle, spreading it out to form a thin, round pancake. It should be about the size of a small crepe or pancake (around 20 cm in diameter).
Cook for 2-3 minutes until the bottom is golden and slightly crispy.
Flip the Testarolo over carefully and cook the other side for another 2-3 minutes.
Remove from the griddle and place on a plate to cool slightly. Repeat the process until all the batter is used up.
Step 3: Cut and Serve
Once all the Testaroli are cooked and slightly cooled, cut them into strips or squares.
If you are serving them with Pesto alla Genovese, heat the pesto in a pan and toss the Testaroli strips in the pesto until well coated.
If you prefer tomato sauce, heat your sauce and toss the Testaroli in it until evenly coated.
Garnish with freshly grated Parmigiano Reggiano if desired.
Chef’s Tip
Testaroli is best served fresh, right after tossing with sauce, as the texture of the batter is most enjoyable when it is soft and chewy. For a unique twist, you can also add sautéed vegetables like zucchini or mushrooms to the pesto sauce for added flavor and texture.
