Ingredients

  • 300g honey

  • 150g sugar

  • 2 large egg whites

  • 400g toasted nuts (almonds, hazelnuts, or pistachios)

  • Zest of 1 lemon

  • Edible wafer paper (optional)


Instructions

Step 1: Prepare the Nuts

  1. Toast the nuts in a preheated oven at 180°C (350°F) for 8-10 minutes. Set aside to cool.

Step 2: Heat the Honey

  1. In a small saucepan, heat the honey over low heat for about 20 minutes until it thickens slightly. Stir occasionally to avoid burning.

Step 3: Beat the Egg Whites

  1. In a mixing bowl, beat egg whites until soft peaks form. Gradually add the sugar and continue beating until glossy.

Step 4: Combine Honey and Egg Whites

  1. Slowly pour the hot honey into the egg whites while whisking continuously. This creates a smooth and airy mixture.

Step 5: Add Nuts and Lemon Zest

  1. Gently fold in the toasted nuts and lemon zest, ensuring they are evenly distributed.

Step 6: Shape and Cool

  1. Line a baking tray with wafer paper (or parchment paper). Spread the torrone mixture evenly, pressing it down with a spatula.

  2. Cover with another layer of wafer paper and let it cool for 4-6 hours or overnight.

Step 7: Cut and Serve

  1. Once firm, cut the torrone into bars or squares. Serve and enjoy the chewy, nutty treat!


Chef’s Tip: Use high-quality honey and freshly toasted nuts for the best flavor. For added variety, mix different nuts or add a pinch of cinnamon for a festive twist.
